Ingredients
- 2 cups (210 g) elbow macaroni, uncooked
- ¼ cup (30 g) all-purpose flour
- ¼ cup + 1 teaspoon (60 g) light butter spread
- ¼ teaspoon salt
- 1⅓ cup (320 ml) skim milk
- 1 cup (115 g) cheddar cheese, cubed
- 2 slices bread
- ⅛ teaspoon ground black pepper
- ⅛ teaspoon garlic powder
- ⅛ teaspoon dried oregano
- ⅛ teaspoon dried minced onion
- ⅛ teaspoon cayenne pepper
Making a cheese sauce for pasta with milk is one of the essential steps for a good mac and cheese dish. Cheese is a delicious and versatile ingredient that allows you to add a great finishing touch to your vegetables, pasta and meat dishes. Mix the macaroni and the cheese sauce in the sauce pan (don’t use the colander for this) and then place it in an oven proof dish. Sprinkle on the grated Parmesan (or add the dusting of paprika) and place under a hot grill for around 5 minutes or until the cheese on top starts to go crisp or form a slight crust. Directions
- Preheat oven to 350°F (180°C).
- Cook macaroni as directed on package. Drain.
- Spray an 8-inch x 8-inch (20 cm X 20 cm) baking dish with vegetable cooking spray then add macaroni to dish.
- Place butter, flour, salt, and milk into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 3-4 minutes or until heavy steam escapes through the lid opening. As mixture thickens, it will not splash as much.
- Remove the lid plug and add cheese through the lid opening.
- Blend for 1 minute.
- Pour over macaroni and mix thoroughly.
- Cover macaroni with bread crumb mixture and bake until top is golden brown, about 30 minutes.
- To make crumb topping, toast 2 pieces of bread and squeeze each piece into a ball.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 4.
- Remove the lid plug.
- Drop each bread ball through the lid plug opening.
- Blend until you have crumbs. Add seasonings to the crumbs.

Other than that, It sure does save time not having to stand over the stove stirring the sauce and hope it won't burn. Great for a quick Saturday night supper with hot dogs.

Next time, though, I will add 1-1/2 cups of milk to make it just a little more creamier. Plus, to save time, I keep homemade bread crumbs in the freezer for use in recipes like this; bread crumbs which I always make in my Vitamix.

I use farm rasied eggs and raw milk in this because it's what's available to me. I like using New York Sharp cheddar cheese in this. Also have use smoked Gouda and Swiss cheese. At the church meal, I didn't bring any leftovers home.

Used low-fat sharp cheddar and smoky gruyere, added just a little spinach and cauliflower, and mustard for flavor instead of cayenne. Of course, whole grain bread and macaroni for a higher fiber, higher protein, and lower fat meal with veggies hidden inside. I finally have a healthy mac & cheese recipe. Thanks Vitamix!

Went over really well at the pig roast! Plenty of cheese sauce, very creamy too!

Now that you have the basics to choose from, here are the 18 secrets for the richest, creamiest mac and cheese that I put in to play each and every time I make it for anyone. They never fail me, and I know they’ll work for you, too:
- Cook your butter and flour together for about one minute to remove any raw flour flavor before adding the milk or cream to your recipe.
- Undercook your pasta—cook one minute less than the package directions to avoid a mushy mac and cheese.
- Swap rich cream for all or half of the milk in the recipe.
- Cook your pasta in salted water.
- Season every layer of your sauce: the roux, after the milk is added and after the cheese is melted in. Just a little sprinkle of salt is plenty–it will add up. You can even take the total amount of salt recommended in the recipe and just add a bit to each step. That works just fine.
- Choose noodle shapes that will hold on to the sauce—this includes shells, corkscrews, rotini or anything with ridges.
- Add the cheese to the milk and flour mix with the heat off so the mixture doesn’t separate.
- Don’t add all your noodles at once; see how much sauce you have and add more noodles as needed OR Make more sauce than you think you’ll need for a super creamy final product.
- Avoid over baking. Bake only for the time recommended, or when the center is bubbling and you see some golden edges. Cooking it too long will give you a mushy final product.
- Consider a dash of dry mustard powder.
- Add a pinch of cayenne pepper for some heat .
- Spice it up with jalapenos, a little salsa and pepper jack cheese.
- Swap out your cheeses. Cheddar is best but add a melter like fontina, Monterey jack or some parmesan.
- Bake your mac and cheese in a more shallow, wider dish if you want more of that crunchy top.
